    During the last week of February, Celiac Canada held an event called The State of Celiac Disease in Canada, during which the preliminary results of the recent national survey were presented. I was invited to bring my podcast equipment to the event and record conversations with some of those involved. This episode was recorded at the event, so you will notice some distortion and background noise in the audio – there was lots going on.

    I had the pleasure of speaking with James King. James has been a guest on the podcast previously, but this conversation was all about survey results. James is an analyst who is able to make sense of the numbers. He shares some of his insights into survey results with us. I also spoke to Registered Dietician Caleigh McAulay from Celiac Canada about her role in the formulation of the survey and how the results might help her help us.

  • Ep 297 March 2024 Roundup

    It’s time to catch up with Ellen Bayens of theceliacscene.com for the beginning of March 2024. I have the opportunity to review some of the articles Ellen has brought to our attention over the past month and ask questions as well as interject my own thoughts.

    We talk about a line of granola snacks and breakfast s foods that recently had their “gluten free” designation removed because the manufacturer is no longer using gluten free oat products. As consumers we must accept this as a business decision, but the concern of both Ellen and I was the lack of awareness with consumers of this big change in ingredients.

    Ellen brings to our attention a couple of food recalls by Health Canada of foods containing undeclared gluten. You can sign up to receive these alerts and specify which ingredients you are concerned about on the recalls and alert page – https://recalls-rappels.canada.ca/en

    Ellen includes an interesting article about a young professional hockey player and his journey with celiac disease.

    Of a more concerning nature is the article about a very specific form of cancer which is more common in celiacs and is on the rise. We discuss some of the statistics and if you should be concerned yourself.

  • Ep 249 Kinnikinnick’s Story Continues

    February 14, 2024 /

    On this episode I speak with Diane Bertrand from a company called English Bay. I wasn’t familiar with English Bay, and that’s because they produce foods for other companies. They do, however maintain a gluten free food manufacturing facility and when the owners of Kinnikinnick were looking for a good time to retire, after all the difficulties of running a specialized food business during the pandemic, English Bay seemed like the perfect fit.

    Diane fills us in on the plans for Kinnikinnick going forward, and it’s comforting to know that not only will things ramp up to get more product into stores, but the products themselves will stay the same including the “free from” identification. Diane and the team from Kinnikinnick have lots of work to do, but it’s something they have the resources and excitement for.

  • Ep 250 How To Get More Fibre with Cinde

    On a recent podcast I spoke with Ellen Bayens about the importance of fibre in a gluten free diet. This topic keeps coming up whenever I speak to someone who is knowledgeable about nutrition. The fact is that most people in general, are not getting close to their recommended intake of fibre. When we talk about those on a gluten free diet, it’s very evident that fibre plays a major role in overall gut health and more effort should be made to increase the fibre in our daily diet. This is where my guest comes in – Cinde, The Everyday Gluten Free Gourmet has lots of suggestions and recipes that can enhance your everyday menus to include more fibre. Cinde has set herself and the listeners three challenges to get more fibre, as well she’s given us lots of recipes and suggestions to do just that.

    Its the beginning of February which means I get the chance to speak with my friend Ellen Bayens of theceliacscene.com to discuss some of the articles she has brought to our attention over the past month. This month is focussing on gut health and those confusing supplements we are seeing everywhere that suggest some of our digestive issues can be solved with a pill that will improve our gut microbiome and in turn our gut health. Ellen breaks down all of the hype and wording around the supplements as well as the studies that are often quoted by supplement providers.

  • Ep 293 Gluten Free Cruise Update

    January 22, 2024 /

    On podcast episode 284 I invited you to find out more about a European River Cruise that was being organized by Expedia Cruises, or more specifically, Dianna McIntosh from Ottawa. There was a very tight timeline to book, which made bringing everything together very difficult. Since that time, Dianna and Expedia Cruises have pivoted to a different provider, a slightly smaller ship, but with even more spaces suitable for the group. The new dates of the cruise are now May 3rd to May 10th, 2025. There are exciting other changes as well.

  • Ep 290 Mental Health and Celiac Disease with Justine Dowd

    I had a very interesting conversation with Justine Dowd, PhD, a Health Coach who is also celiac. She works with individuals who are struggling with gut health issues. These issues can make someone feel less like themselves and put one in a spiral of depression and anxiety. We are all familiar with the struggles of feeling safe on a gluten free diet, and depending on what else is going on in your world, and what support systems you have, these struggles can have a negative effect on your day-to-day life.

  • Ep 289 Gluten Free Kitchen Tips with Robyn

    Preparing food gluten free is not easy. For those newly diagnosed, or someone cooking or baking for them, it’s a steep learning curve. I am often asked for advice on how to set up a gluten free kitchen to make food preparation and baking easier. On this episode I speak with Robyn of Robyn’s Gluten Free Baking Courses for advice and practical tips to set up your gluten free kitchen to make baking fun and hassle free. Both Robyn and I have been baking gluten free for years, and we’ve come up with some handy tips to take some of the stress out of so many flours and the different equipment you might need.

    Here’s Robyn’s list of flours other information she sent me –

    What I keep in large jars (used most often):

    • Brown rice flour
    • White rice flour
    • Sorghum flour
    • Gluten-free Oat flour
    • Tapioca starch
    • Potato starch
    • Corn starch (though I just keep it in the large container from Costco!)
    • Almond flour: I also always have almond flour on hand, but I also buy the large bag from Costco and keep it in the fridge.

    Other flours I like to have. I usually keep them in smaller jars or buy them as I need them:

    • Teff flour
    • Millet flour
    • Buckwheat flour
    • Sweet rice flour (I mainly use it during the holidays)


    I also keep a small to medium-sized jar of xanthan gum in my baking drawer.

    For those who might be overwhelmed with the number of ingredients listed here, my 6 must-have list for basic gluten-free baking are brown rice flour, white rice flour, almond flour, potato starch, tapioca starch, and cornstarch (as well as xanthan gum). These are all of the GF baking ingredients I use to make everything in my Essentials Course. 

    These are the jars I use for my everyday baking (what I consider to be “large jars”). If I buy even larger quantities of flour than what fits in the jars, I will keep them stored away and refill when necessary.

    This is what my bread pans are like. They are normally used for a steam table in a restaurant, but they work amazingly well for bread in the oven. They are ¼, which means they are ¼ of a full steam table pan. They come in different depths, but I find the 4” one is best for gluten free bread.
